Ingredients for 2 people:
3 eggs, 1 pinch of salt, 2 tbsp sugar, 2 tbsp milk, 2 tbsp flour, 1 tbsp butter, 1 tbsp icing sugar. (Perhaps with a little vanilla sugar, raisins)
Separate the egg white from the yolk, beat the egg white with 1 tbsp sugar and a pinch of salt, to make stiff peaks, mix the egg yolks with sugar until creamy, add milk, then gently fold in the beaten egg white mixture, do not stir hard, (if desired add the raisins and vanilla sugar). Fold in flour gently. Slowly bake on both sides until golden brown, in a frying pan on a low temperature. Rip into even-sized pieces with a fork. Serve and sprinkle with icing sugar. Your choice of compote will go well with this. Happy cooking.
