The unique culinary skills of our head chef Damir Srsa have already been awarded 1 Gault&Millau toque and two Falstaff forks. These honors fill us with great pride. They are not only the result of the dedication of our entire kitchen team, but also of the passion and creativity of our head chef.

"What would a holiday be without the delights from kitchen and cellar? I simply can’t imagine it. From herbs, spices, fruits and berries harvested during the snow-free months and grown in our own gardens – they already play a starring role in our cuisine.

For me, regional origin and honest flavour are at the very top of my list. Farmers, bakers, alpine dairies and other producers from Montafon and across Vorarlberg supply ingredients that are truly exceptional in taste and quality. That’s exactly what we rely on in our kitchen – outstanding regional products that allow us to create authentic and unforgettable flavours."

Kaiserschmarrn

The classic Austrian sweet speciality

Ingredients for 2 people:

  • 3 eggs
  • 1 pinch of salt
  • 2 tbsp sugar
  • 2 tbsp milk
  • 2 tbsp flour
  • 1 tbsp butter
  • 1 tbsp powdered sugar (optional: vanilla sugar and raisins)

Separate the egg whites from the yolks. Beat the egg whites with 1 tbsp sugar and a pinch of salt until stiff. Whisk the egg yolks with the remaining sugar until creamy, then add the milk. Gently fold the beaten egg whites into the mixture without stirring too strongly. If desired, add raisins and vanilla sugar. Lightly fold in the flour.

Heat the butter in a pan and bake the mixture slowly over low heat until golden brown on both sides. Tear into bite-sized pieces using a fork. Arrange on a plate and dust with powdered sugar. Serve with fruit compote if you like.
